Exchange is finicky when it comes to backups. I trust your customer did
their due diligence when it came to making a decision for an e-mail
server platform and budgetted education for the sysadmins?

A surprising amount of data can be recovered from Exchange backups.
Unfortunately, it usually entails restoring the entire datastore to a
scratch location, making the exercise a tad tedious if your datastore is
large.

For MS Messenger, I believe records are not kept generally, but maybe
the user kept logs on his workstation.

On the server, I expect data recovery software to be of limited value.

I do not envy your task.
